- 2 ounces gin
- 1 1/2 ounces cranberry juice (not cranberry juice cocktail)
- ginger beer to float
- ice for serving
Add a handful of ice to a large cocktail shaker. Next, add ice to two old-fashioned or highball glasses. The taller the glass, the more ginger beer you can add to your cocktail. Measure the gin and the cranberry juice into the ice-filled cocktail shaker. Add more or less cranberry juice to suit your preference.
Place the cap on the cocktail shaker and shake the mixture vigorously until the outside of the shaker frosts over.
Pour the gin-cranberry mixture into the ice-filled cocktail glasses and float ginger beer over the mixture. Stir gently with a cocktail pick or stirrer and garnish as desired. Enjoy responsibly.
Alternatives to the Ginger Beer:
- soda water
- tonic water
- seltzer water
Cranberry juice substitutes:
- pomegranate juice
- apple cider
- pear juice
- cherry juice
Ginger Rickey Mocktail:
- Omit the gin in the recipe and replace the cranberry juice with cranberry juice cocktail for a sweeter drink.
- Swap out the ginger beer for ginger ale.
- Serve over ice.
Ginger Rickey Pitcher Cocktail:
1 cup (8 ounces) gin
3/4 cup (6 ounces) cranberry juice
Ginger beer to float
- In a cocktail pitcher, stir together the gin and cranberry juice. Chill the gin-cranberry base in the refrigerator until ready to serve. *Don't forget to chill the ginger beer also!
- When you're ready to serve, set the pitcher, the cans of ginger beer, and a bucket of ice out for your guests.
- Allow guests to fill their glasses with ice, the gin-cranberry mix, and float the ginger beer on as desired.
- If you have garnishes, lay them out on a separate platter so they can garnish at will.
