Chèvre & Prosciutto Flatbread topped with Figs & Arugula

This quick-fix flatbread is a complex of delicious flavors. Use ripe figs for optimum flavor.

Ingredients

  • 1 8.8 oz pkg garlic or plain naan
  • 5 oz chèvre crumbled
  • 1 cup thinly sliced red onion
  • 4 oz sliced prosciutto torn into 2" pieces
  • 4 figs sliced 1/8" thick
  • 2 cups arugula
  • balsamic vinegar to drizzle

Instructions

  • Set your oven's rack on the middle level. Heat your broiler to low, and toast your naan, directly on the rack, for no more than 3 minutes per side. You don't want to bake it, just toast it until crisp. Remove it from the oven.
  • Scatter the crumbled chèvre over the surface of the naan. Leave a narrow border along the edge to prevent anything from falling off in the oven. Add the red onion, followed by the prosciutto. Finally, top with the sliced figs.
  • Broil on low, directly on the rack for 5-7 minutes, or until the bread starts to char. 
  • Remove from the oven and top, immediately, with the arugula. Drizzle with a liberal amount of balsamic vinegar and enjoy!
