What Are The Ingredients In Greek Seasoning Blend?
The ingredients in this Greek seasoning blend are kosher salt, oregano, granulated onion, dill weed, granulated garlic, parsley flakes, marjoram, thyme, crushed rosemary, coriander, black pepper, nutmeg, basil, lemon peel, fennel, and, finally, cinnamon.
The spices in the recipe are ground, and the herbs are dried, but not all of them. Consequently, I recommend using a mortar and pestle or a coffee grinder for the next step.
Why Do I Need To Grind The Salt and Fennel Seeds?
Start by adding the kosher salt and fennel to a mortar and pestle or a coffee grinder and grind them to a semi-fine powder. Since fennel seeds and kosher salt are coarse as far as spice blends go, grinding them prevents us (or our diners) from getting a big piece of licorice-tasting fennel in our dishes.

Can I Omit Any Of The Ingredients?
My Greek seasoning blend is an all-in-one seasoning mix. Which means you won’t have to add any other herbs and spices to your recipe if you use it. There are a lot of herbs and spices in it, though, so feel free to omit what you don’t have. The least important ingredients are the parsley flakes, coriander, basil, lemon peel, and cinnamon.
Use a small whisk to combine the spice blend together in the bowl.
How Can I Switch It Up?
Add crushed red pepper flakes, smoked paprika, hot paprika, dried orange peel, or sumac to add more spicy flavor to this Greek seasoning blend. Sumac is a powder of the red berry of the same name, which tastes like a lemony paprika.
Finally, use a funnel to pour the spice blend into a glass storage jar.
What’s The Best Way To Store Spice Blends?
Seasoning blends should be kept in a glass jar with a tight-fitting lid. The best place to store homemade seasoning blends is in a spice cabinet or pantry, away from heat and moisture. Moisture causes the spices and herbs to swell up, releasing (and wasting) their fragrance and causing mold to grow in the jar. Heat also coaxes out the natural oils from the spices and herbs. After a few days or weeks of that heating and cooling, your seasoning blend tastes less potent and fresh.
Avoid storing Greek seasoning blend in the refrigerator or freezer. Because of the condensation from inside the fridge and freezer that gets trapped in the jar, storing it in the fridge or freezer causes the spice blend to sweat when you bring it to room temperature.
Store your seasoning blend for up to 1 year. You can even get 18 months out of it if you make it with newly opened herbs and spices.
How Do I Keep Spice Blends From Clumping?
Spice blends naturally clump together in storage. Add a food-safe silica gel pack to the jar with the seasoning blend to prevent clumping during storage.
If you don’t feel like buying silica packs, shake the crap out of the jar before measuring out the spice blend for the recipe you’re using it in.

- 1 1/2 tablespoons (2 grams) dill weed
- 1 1/2 tablespoons (1 gram) parsley flakes
- 1 tablespoon (5 grams) crushed rosemary
- 1 tablespoon (3 grams) dried thyme leaves
- 1 tablespoon (2 grams) dried marjoram
- 1/2 tablespoon (3 grams) dried basil
- 2 teaspoons (3 grams) ground nutmeg
- 1 1/2 teaspoons (4 grams) dried lemon peel optional
- 1 1/2 teaspoons (3 grams) ground coriander
- 1 teaspoon (3 grams) black pepper
- 1 teaspoon (2 grams) dried fennel seeds
- 1/2 teaspoon ground cinnamon optional
Instructions
Grind Down the Kosher Salt and Fennel
