Enriched Yeast Breads
As trained pastry chef with more than 25 years of baking under my apron, I'm proud of my enriched yeast breads recipes. Enriched, or "rich," yeast bread doughs contain a higher percentage of fat, sugar, and
(in some recipes) eggs.
In recipes like my Brioche Rolls, you'll taste more butter and use more eggs, but there's less sugar in the dough. With sweet rolls, like my Cherry Sweet Rolls or my Pumpkin Caramel Sticky Buns you see a higher fat and sugar content with more sugar from their fillings.
